Also made a cantaloupe soup... chilled with fruit juices... so tasty.
Here is our cured duck from last week... it was poached in it's own fat today. I didn't want to try it... people loved it.
We do eat pretty well in class... one of the chefs will whip something up... this was turkey a la king... yep, big plate... very good!!!
