Made Melanzane Caponata (sweet and sour eggplant), Risotto, Chicken Cacciatore and Zabaglione (warm custard)... pretty good stfuff.

German food today... Reibekuchen (potato pancakes), Zwieblekuchen (onion tart), Sauerbraten (beef roast) and Weiner Schnitzel (pork cutlet) and Spatzel... really tasty food!!!

Tuesday / Scandinavia & The British Isles...

My last 3-week class at Le Cordon Bleu... it is International Cuisine... European and Asian cooking. Then it'll be on to the Le Cordon Bleu restaurant... called Cafe Bleu. I'll have to serve food for 3 weeks... then cook for the last 3 weeks. As of today... I'm planning to attend the Disney World Resort's Culinary College program in Orlando... this is my externship... six month assignment.

Anyway... today's menu was Cockaleekie (soup), Kotbullar (Swedish meatballs) and sauteed brussels sprouts, cucumber salad and Aeggekage (Danish pancake-type w/strawberry dessert) very tasty!!!

Not impressive today... apple and bitter greens with bacon sherry vinaigrette -- cedar plank roasted salmon, wild mushrooms, fingerling potatoes and raspberry jus -- shiitake dusted sole paupiettes with brasied romaine, zucchini served a la nage.

Made... gumbo -- crawfish etouffee w/steamed rice -- cajun pan-fried catfish w/jambalaya and roasted merliton, creole sauce -- blackened pork tenderloin w/tomato stew. Big stomach right now... almost pooh time!!!

Today... was beef and barley soup -- baked meatloaf with smashed potatoes and gravy -- herb crusted lamb chops, corn timbale, wild rice and grilled asparagus... I'm stuffed!!!

Today... Crab Callaoo -- mojo pork mofongo with moros y cristianos, mango and avacado salsa -- Jamaican jerk chicken, jicama and grapefruit slaw. Excellent recipes... tasty food.



Thursday / Old South Day...

Tons of food again... grilled shrimp with vegetable escabeche, cheddar cheese grits and sauce Americaine -- buttermilk fried chicken with cow peas, collard greens and fried okra... plus buffalo wings -- hoppin' john and hush puppies too.

Tuesday / New England Day...

New class, called American Regional Cuisine... today was New England day... on the menu was clam and lobster chowder -- seared scallops with whipped potatoes, peas and pearl onions, and beurre blanc sauce -- herb roasted turkey breast with mushroom dressing, pan gravy and cranberry sauce... and succotash. Group effort... tons of work... lots of food... yummmmmm.

Internship / Walt Disney World... I'm In!!!...

So, I'll be finished with Le Cordon Bleu on March 27th... then, we need to find an internship program. Walt Disney World Resort was at the school back in early December... I went to their presentation and tested and interviewed... and I was accepted... one of 8 people from our school who got the invitation. So... I'll start Apr 7th in Orlando. There is another resort coming to LCB in two weeks... called Grand Teton Resort... in Yellowstone National Park... I kind of want to do them... we'll see.
